Practices for handling fish meat during its route from the “River to the dish” in Santa Fe, Santo Tome and Sauce Viejo

Facultad de Ciencias Veterinarias; Argentina.Este trabajo tuvo como objetivo indagar acerca del conocimiento que tienen los involucrados en la manipulación de los recursos pesqueros, sobre los peligros alimentarios que pueden hallarse en los eslabones: Pescador- Acopiador- Transportistas- Pescaderías- Consumidores, de la cadena agroalimentariaque lleva la carne de pescado del “río al plato” en las localidades de Santa Fe, Santo Tomé y Sauce Viejo, El método de investigación empleado fue cualitativo, mediante observación, encuestas y entrevistas para la recolección de los datos. A partir de las entrevistas y visitas realizadas, los eslabones detectados como más vulnerables ante estos aspectos fueron: el inicial, los pescadores, el transporte de estos productos y el de los consumidores. Desde este estudio se pretende, mostrar los posibles puntos que se encuentran en condiciones de mejorar, empleando para ello futuros planes o programas de capacitación y educación. La idea es optimizar el uso de los recursos naturales por un lado y ofrecer al mercado consumidor, un producto con la máxima calidad e inocuidad posible.This work aimed to investigate the knowledge that those involved in the manipulation of fishery resources have about the food hazards that can be found in each one of the links of the agrifood chain which take fish from “river to the plate”: (Fisherman – Collectors/Slaughter fish houses - Carriers – Fish shops - Consumers) in Santa Fe, Santo Tomé and Sauce Viejo, The research method employed was qualitative, through observation, surveys and interviews for data collection. Based on the interviews and visits made, the links of this food chain detected as vulnerable were: the initial, fishermen, transport of these products and consumers. From this study it is intended to show the possible points which are in conditions to be improved, through future plans or programs to educate and train people working in this issues. It is pretend to optimize the use of natural resources on the one hand and offer the consumer market a product with the highest possible quality and safety.Universidad Nacional del Litora
